Total Time: 45 minutes

2 tablespoons unsalted butter

1 large Vidalia or other sweet onion, sliced

Kosher salt and freshly ground black pepper

1 cup sour cream

1/2 cup mayonnaise

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

Potato chips, for serving

In a large skillet, melt the butter over medium heat. Add the onions and cook until deeply browned and caramelized, stirring frequently, about 15 to 20 minutes.

Cool onions to room temperature, then transfer to a cutting board and roughly chop. In a medium bowl, mix together caramelized onions with remaining ingredients and stir to combine.

Season to taste with salt and black pepper, and refrigerate until chilled. Serve with potato chips.
