Lavender Simple Syrup

About the recipe

While you may be used to seeing them only as cocktail ingredients, simple syrups are also a great substitute for granulated sugar in lemonade, sweet tea or for adding pep to your seltzer water for a refreshing summer soda. Feel free to adapt this easy recipe to use any herb or flower growing in your garden.

Instructions

Combine the water, sugar and lavender flowers in a medium saucepan. Bring to a simmer, stirring, to dissolve the sugar. Turn off the heat and let cool. 

Pour the mixture through a fine mesh strainer into a Mason jar. Add the vodka if you’d like to preserve the syrup for long-term use. Seal and refrigerate. The vodka-free syrup is good for up to three weeks.
