Southern Kitchen’s Perfect Grilled Cheese

The perfect grilled cheese is easy — just remember the number two. For every two slices of bread, use two tablespoons mayonnaise, and two tablespoons each sharp cheddar (for flavor) and mozzarella (for melty goodness). And yes, we always prefer to use mayonnaise on the outside of our bread for a perfectly crisp, golden brown crust. Use Duke’s Mayonnaise for best results.

Ingredients
2 slices white sandwich bread
2 tablespoons mayonnaise
2 tablespoons grated sharp cheddar cheese
2 tablespoons grated low-moisture mozzarella cheese
Instructions
Place the bread slices on the counter and evenly spread 1 tablespoon of mayonnaise on one side of each piece of bread.
Place a small cast iron or nonstick stillet over medium-low heat. Place one slice of bread, mayonnaise side-down in the skillet. Top with both cheeses, followed by the second slice of bread, mayonnaise side-up. Cook, pressing down on the bread occasionally with a fish spatula, until golden brown, 3 to 5 minutes. Flip and cook on the second side until the bread is golden brown and the cheese is melted, 3 to 5 minutes.
Let rest for a few minutes, then slice into triangles and serve.
