Pimento Cheese With “Woo Woo Sauce”

Ingredients
1 1/2 pounds extra sharp cheddar cheese, grated
1/2 Vidalia onion, grated
1/2 cup mayonnaise, or to taste
1/4 teaspoon Worcestershire sauce or to taste
1 (7-ounce) jar pimentos, drained and chopped
Tabasco sauce to taste
Celery stalks or crackers, for serving
Instructions
In a large bowl, stir together the cheese, onion, mayonnaise and Worcestershire sauce until well combined. Add pimentos and season with Tabasco sauce and salt and pepper, if desired. Store in an airtight container in the refrigerator for up to 2 weeks.
Serve with celery stalks or crackers.
About the recipe
The pate of the South, pimento cheese is the epitome of a summer picnic. Everyone has a slightly different recipe, a little more of this, a little less of that - but the primary ingredients remain the same. This version uses Worcestershire sauce (or as Morris’ family calls it, “Woo Woo sauce”).
Don’t buy cheese that has been already grated, because the end results won’t be creamy enough. If you like, season to taste with coarse salt and freshly ground black pepper.
