Hibiscus Vinaigrette

Serves: Makes 1 1/4 cups

1/2 cup plus 1 tablespoon extra-virgin olive oil

1/2 cup Champagne vinegar

1 1/2 tablespoons Dijon mustard

1 tablespoon minced shallot

1 1/2 tablespoons Beautiful Briny Sea Mr. Gigglepants hibiscus sugar

Sea salt and freshly ground black pepper, to taste


In a medium bowl, whisk together the olive oil, vinegar, mustard and shallot. Add the sugar, salt and freshly ground black pepper, to taste. Can be made ahead of time and stored in the refrigerator for up to three days.
