One Pan Shake and Bake Pork Chops with Roasted Broccoli

Many of us grew up eating the convenient packaged meat and poultry breading known as Shake ’n Bake. Making the mixture yourself allows you to customize the flavors to your preference, rather than just taking what you get out of the package.Serves: 2

Ingredients
- 2 cups panko bread crumbs
- 1/4 cup cornstarch
- 1 tablespoon paprika
- 1 tablespoon dried Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon celery salt
- Kosher salt and freshly ground black pepper
- 2 thick-cut bone-in pork chops
- 1/3 cup extra virgin olive oil
- 3 cups broccoli florets
- 10 miniature sweet peppers, sliced into 1/2-inch rings
- 3 tablespoons grated parmesan cheese
Instructions
Heat the oven to 425 degrees. In a large bowl or sealable plastic bag, add bread crumbs, cornstarch, 2 tablespoons salt, paprika, Italian seasoning, garlic powder, cayenne, celery salt and 1 teaspoon black pepper, and mix thoroughly.Season pork chops with salt and pepper, then add to breadcrumb mixture. Completely coat pork with bread crumbs, making sure to press bread crumbs onto all sides.Place broccoli and peppers on a baking sheet. Coat with olive oil, season with salt and pepper and place broccoli mixture to one side of the pan. Place pork on sheet pan and roast until golden brown and internal temperature reads 140 degrees on an instant-read thermometer, 15 to 20 minutes. Remove sheet pan from the oven and sprinkle cheese over vegetables. Serve.
