Chocolate Cobbler

Ingredients

6 tablespoons unsalted butter

1 cup semisweet chocolate chips

1 cup self-rising flour

1 3/4 cup sugar

1/4 cup plus 2 tablespoons unsweetened cocoa powder

1/2 cup milk

1 teaspoon vanilla

1 1/2 cups boiling water

Vanilla ice cream, for serving

Instructions

Heat the oven to 350 degrees. Place the butter in an 8-inch square baking dish and place in the oven to melt. Once the butter is melted, sprinkle the chocolate chips over butter.

In a medium bowl, whisk together the flour, 3/4 cup of the sugar and 2 tablespoons of the cocoa powder. Whisk in the milk and vanilla, then spread over melted butter and chocolate chips in the baking dish.

In a small bowl, whisk together the remaining sugar and cocoa powder, then sprinkle over the batter. Pour the boiling water on top of chocolate mixture and bake until crust is set, about 30 minutes. Serve warm with vanilla ice cream.

When you can’t decide which fruit you want to use in your cobbler, bake this ultra-easy chocolate version instead. The order of the ingredients may seem odd at first, but the crust will rise to the top during the baking process, leaving a decadent, gooey filling below. This is best served warm with vanilla ice cream.
