2 ounces gin

1 ounce fresh lemon juice

1 ounce lavender simple syrup

Soda water

Fresh lavender and lemon peel, for serving


Combine the gin, lemon juice and lavender syrup into a Collins glass. Add a small handful of ice and top with soda water. Garnish with the fresh lavender and lemon.
