Lemon Thyme Bitters

2 cups Everclear 151

1/2 cup botanical gin

2 lemons, chopped

2 ounces fresh lemon thyme, chopped

2 tablespoons glycerin

1 tablespoon dried hops

2 teaspoons dried quassia chips

1 teaspoon cut gentian root


Combine the Everclear, gin, lemons, thyme, glycerin, hops, quassia and gentian in a 32-ounce glass jar. Seal and give the jar a shake. Set the jar aside for five days, shaking once a day. 

After five days, give the bitters a taste test. If the mixture doesn’t have a strong flavor, let it go another day or two until you’re satisfied. 

Pour the mixture through a coffee filter-lined strainer into a large measuring cup. Make sure to get as much liquid as possible into the cup. Let the mixture settle for 1 hour. 

Line a funnel with a double layer of cheesecloth and place over one of the dropper bottles. Slowly pour the bitters into the bottle, leaving room for the insertion of the dropper. Repeat to fill the remaining bottles.

Label bottles and store in a cool, dark place. The bitters are best used within three years.
