Sheet Pan Low Country Boil

Ingredients
4 large red potatoes, cut into bite-sized pieces
1/4 cup extra virgin olive oil
Kosher salt and freshly ground black pepper
1 pound large shrimp, deveined
1 pound smoked sausage, cut into 1-inch pieces
2 ears yellow corn, cut into 2-inch rings
1 1/2 tablespoons Old Bay Seasoning
6 tablespoons unsalted butter, cubed
1 clove garlic, finely minced
Lemon wedges, for serving
Instructions
Heat the oven to 400 degrees. On a baking sheet, toss potatoes with olive oil, salt and pepper. Roast potatoes until tender, 20 minutes. Remove from the oven and add shrimp, sausage and corn to the baking sheet. Sprinkle with Old Bay and toss to combine. Return pan to the oven and cook until shrimp are pink and corn is tender, 10 to 12 minutes.
While shrimp are cooking, place butter and garlic in a microwave-safe bowl. Microwave on high for 2 minutes. When shrimp are fully cooked, remove sheet pan from the oven and toss all ingredients with butter mixture. Serve with lemon wedges.

Who needs a large stockpot, propane burner or a big group of people when you can capture all the flavors of a Low Country boil on a single sheet pan? Make sure to partially roast the potatoes before adding the remaining ingredients so everything is properly cooked at the end. Otherwise, you’d end up with rubbery shrimp and undercooked potatoes.
