Instant Pot braised kale with onion and jalapeños come together in just 15 minutes
About the recipe
Using a pressure cooker or Instant Pot to cook greens makes them taste like they’ve been simmering for hours, but 15 to 20 minutes is all you need. This recipe works just as well on the stove top; just simmer the whole thing until the greens are tender.
Serves: 6 to 8
Hands On Time: 30 minutes
Total Time: 30 minutes
2 cups vegetable broth
1/2 cup apple cider vinegar
1/2 cup cane syrup
1/4 cup extra-virgin olive oil
1 pound chopped kale
1 sweet onion, halved and thinly sliced
1 jalapeño pepper, thinly sliced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
In an Instant Pot, combine the broth, vinegar, syrup, olive oil, kale, onion, jalapeño and garlic. Season with salt and pepper.
Seal the lid and cook on the manual setting for 15 minutes. When the timer sounds, use the quick release to release the pressure. Stir well and season to taste with salt and pepper. Serve.
