Instant Pot Barbecue Pork Shoulder

Instant Pots can make tough cuts of meat such as pork shoulder tender in no time.
This barbecue-style pork recipe is ultra-easy; you won’t even need to pull out a knife. Simply season the pork and combine everything in the Instant Pot to cook.
The braising liquid is delicious served over grits or mashed potatoes, or when reduced, can act as a tasty barbecue sauce for a pulled pork sandwich. We like to use Texas Pete hot sauce in this recipe.
While we developed this recipe in an Instant Pot, you can also use a different brand of pressure cooker. Cook the pork on high pressure and use the quick-release after 90 minutes.

Ingredients
1 (3-pound) boneless pork shoulder
Kosher salt and freshly ground black pepper
1 (12-ounce) bottle lager-style beer
1 cup ketchup
1/2 cup whole-grain mustard
1/2 cup packed light brown sugar
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
1 tablespoon hot sauce
Instructions
Season the pork shoulder generously with salt and pepper. Place the pork in the Instant Pot and add the remaining ingredients.
Cover, select the manual option and set the timer for 90 minutes.
Release the pressure. When the steam stops, remove the lid and check for doneness. If the pork is not yet falling apart, re-cover the pot and cook using the manual option for another 30 minutes.
Using tongs, shred the pork and serve. Let any leftovers cool in the braising liquid before refrigerating.
