Topo Chico Paloma

Ingredients
Grapefruit Simple Syrup
Juice of 1/2 grapefruit
2 tablespoons sugar
Cocktail
2 lime wedges
Kosher salt
Ice cubes, for shaking and serving
2 ounces Grapefruit Simple Syrup (above)
1 1/2 ounces silver tequila
Topo Chico sparkling water
Instructions
To make the grapefruit simple syrup: In a small saucepan, bring the grapefruit juice and sugar to a gentle simmer over medium heat. Cook, stirring, until the sugar dissolves, 2 to 3 minutes. Let cool.
To make the cocktail: Run one of the lime wedges around the rim of a Collins glass.
Place about 1 tablespoon of kosher salt into a plate. Dip the rim of the glass in the salt. Fill the glass with ice cubes.
In a cocktail shaker filled halfway with ice cubes, combine the grapefruit simple syrup and tequila. Shake until well-chilled, 15 to 20 seconds. Strain the cocktail mixture into the prepared glass. Add enough Topo Chico to fill the glass. Spritz the second lime wedge into the drink and then place the wedge in the glass. Serve immediately.
