Blueberries Fermented in Honey

2 cups blueberries

2 cups raw honey


Sterilize the jar, jar lid and fermentation weight (see note).

Put the berries in the jar and cover with the honey. Place the weight on top of the berries to keep them submerged under the honey.

Cover the jar with cheesecloth and secure with rubber band. Store the jar in a cool dry place until the berries develop a slight effervescence, three to seven days. Taste the berries every few days to see how they are progressing. Once the berries get to the desired stage of fermentation, remove the weight and cover the jar. Store the berries in the refrigerator to slow the fermentation process.

About the recipe

I know fermented berries doesn’t sound like a huge crowd pleaser, but trust us, these are great. The berries take on a very pleasing tart flavor that is balanced with the honey’s sweetness, plus the berries develop a slight effervescence that is uniquely appealing. These are wonderful on pancakes, waffles and oatmeal, but we tend to just eat them straight out of the jar. This recipe is as easy as it gets — just be sure to use raw honey as it provides the good bacteria for fermenting the berries.

You will need one quart-sized Mason jar, one fermentation weight, cheesecloth and a rubber band for this recipe.
