Slow Cooker Tomato Soup

Ingredients

2 (28-ounce) cans San Marzano tomatoes
2 cups milk
1 sweet onion, minced
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1/4 teaspoon crushed red pepper
Kosher salt and freshly ground black pepper

Instructions

Place the tomatoes, milk, onion, olive oil, garlic and red pepper flakes in the bowl of a slow cooker. Cover and cook until the soup has thickened and the onions have softened, 3 to 5 hours on low.

Use an immersion blender to puree the soup until smooth, thickened and creamy. (Alternatively, blend the soup in batches in a conventional blender.) Season to taste with salt and pepper. Serve hot.
