Slow Cooker Tomato Soup

2 (28-ounce) cans San Marzano tomatoes
2 cups milk
1 sweet onion, minced
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1/4 teaspoon crushed red pepper
Kosher salt and freshly ground black pepper
Grilled cheese sandwiches, for serving (optional)


Place the tomatoes, milk, onion, olive oil, garlic and red pepper flakes in the bowl of a slow cooker. Cover and cook until the soup has thickened and the onions have softened, 3 to 5 hours on low.

Use an immersion blender to puree the soup until smooth, thickened and creamy. (Alternatively, blend the soup in batches in a conventional blender.) Season to taste with salt and pepper. Serve hot with grilled cheese sandwiches, if desired.
