Pimento Cheese

8 ounces Monterey Jack cheese, shredded
8 ounces cheddar cheese, shredded
6 ounces diced pimentos
3/4 cup mayonnaise
1 1/2 teaspoons salt
1 1/2 teaspoons white pepper


In a large bowl, mix together all ingredients until thoroughly combined. Pack firmly into a storage container, cover, and chill for at least 3 hours before serving.
