Foil Packet Potatoes and Onions

Ingredients

3 russet potatoes, peeled and cut into 1-inch pieces
1 small sweet onion, halved and thinly sliced
8 tablespoons extra virgin olive oil
Kosher salt and freshly ground black pepper
8 tablespoons unsalted butter, diced

Instructions

Place potatoes in a medium saucepan and cover with cold water. Simmer over medium heat until potatoes are fork tender. Strain away water and let potatoes cool.

Tear off eight large sheets of heavy duty aluminum foil, approximately 18 inches, and stack into four double-sided sheets. Evenly divide potatoes and onions among each sheet of foil. Drizzle each pile of potatoes with 2 tablespoons of olive oil, season with salt and pepper and toss to combine. Place 2 tablespoons of butter on each pile, then bring the edges of the foil together to form a rectangular packet and seal completely.

Light a campfire. Place foil packets directly in the fire and cook for 6 minutes. Flip and cook an additional 6 minutes or until onions are soft. Serve.
