Spicy Peach and Bacon Salad

6 strips applewood-smoked bacon
6 peaches, pitted and cut into wedges
1/2 cup roasted peanuts, chopped
1 (0.75-ounce) package fresh mint, leaves chopped
1/2 serrano chile, very thinly sliced
1/3 cup extra-virgin olive oil
Juice of 1 lime
Salt and freshly ground black pepper


Heat the oven to 350 degrees.

On a parchment-lined baking sheet, arrange the bacon with at least one inch of space in between each slice. Bake until the bacon is crisp, 15 to 20 minutes. Set aside to cool slightly. Once the bacon is cool enough to handle, chop into one-inch pieces.

In a large bowl, combine the peaches, peanuts, mint and chile with the cooked bacon. Add the olive oil and lime juice and stir to combine. Season to taste with salt and pepper and serve immediately.

About the recipe

This salad offers a balance among very bold flavors: sweet peaches, salty bacon, fiery chiles and tart lime. Feel free to mix all of the ingredients listed with some type of lettuce or leafy salad green, but this combination can easily stand on its own. The salad would also make an excellent accompaniment to roast duck or grilled pork.
