Watermelon With Mint, Lime and Feta

Ingredients

1/2 watermelon
4 ounces mild feta cheese, crumbled
2 tablespoons chopped fresh mint
Juice of 1 lime
Salt and freshly ground black pepper

Instructions

Using a melon baller, scoop the flesh of the watermelon into bite-sized balls. (Alternatively, scoop out the flesh with large spoon and cut it into bite-size pieces.) Reserve the shell, if desired.

Transfer the watermelon balls to a large bowl and add the feta, mint and lime juice. Toss to coat everything in the lime juice. Season to taste with salt and pepper. 

Return the watermelon mixture to the halved out melon shell, if desired, and serve.
