Watermelon With Mint, Lime and Feta

1/2 watermelon
4 ounces mild feta cheese, crumbled
2 tablespoons chopped fresh mint
Juice of 1 lime
Salt and freshly ground black pepper


Using a melon baller, scoop the flesh of the watermelon into bite-sized balls. (Alternatively, scoop out the flesh with large spoon and cut it into bite-size pieces.) Reserve the shell, if desired.

Transfer the watermelon balls to a large bowl and add the feta, mint and lime juice. Toss to coat everything in the lime juice. Season to taste with salt and pepper. 

Return the watermelon mixture to the halved out melon shell, if desired, and serve.



Per serving: 129 calories (percent of calories from fat, 28), 4 grams protein, 21 grams carbohydrates, 2 grams fiber, 4 grams fat (2 grams saturated), 13 milligrams cholesterol, 164 milligrams sodium.

About the recipe

Use the scooped-out watermelon shell as a serving bowl. Not only does it look great, but it's also disposable — you don't have to bring home the bowl.
