Single-Serving Lump Crab Spaghetti

Ingredients

2 ounces dried spaghetti
1 tablespoon extra-virgin olive oil
1/2 shallot, minced
2 cloves garlic, minced
1 cup heavy cream
2 tablespoons sambal, or other hot chili paste
4 ounces lump crab meat
Kosher salt
Sliced scallions, for serving

Instructions

Bring a pot of salted water to a boil. Cook the spaghetti until al dente, then drain and set aside.

Heat the oil in a large skillet over medium heat. Add the shallot and garlic and cook until soft and fragrant, 1 to 2 minutes. Add the cream and sambal and bring to a rapid simmer. Continue to cook until the mixture is thick enough to coat the back of a spoon and measures about 3/4 cup.

Add the spaghetti and crab meat and toss well to combine. Continue to cook until the cream returns to a simmer and the sauce thoroughly coats the pasta. Season to taste with salt. Transfer to a serving plate and serve topped with sliced scallions.
