Ingredients
4 large flour tortillas
2 cups cooked white rice
1 cup canned refried beans
¾ cup shredded Mexican cheese blend
½ cup salsa, plus more for serving
Instructions
Tear off a sheet of heavy duty aluminum foil, approximately 18-inches-long. Place tortilla at one end and spread ¼ cup of beans halfway between the center and the nearest edge of the tortilla. Top beans with ½ cup rice, 3 tablespoons cheese and 2 tablespoons salsa. Tightly roll the full end of the tortilla over itself to form a burrito, taking care to tuck in the edges. Tightly wrap burrito in aluminum foil. Repeat with remaining tortillas.
Build a medium campfire.
Place burritos directly on the fire and cook until cheese has melted and burrito is hot throughout, 10 minutes, turning once. Remove from the fire and serve with additional salsa.
Burritos are such an easy food to prepare for a camping trip. Everything inside them is already cooked, they require no utensils or cooking equipment, and you can easily customize them to your liking. Just tightly wrap them in aluminum foil and throw them in the fire until hot throughout.
