Tropical Snow Cocktail from MG Road

Ingredients

Acid-Adjusted Pineapple Juice
1000 millileters fresh pineapple juice
16 grams citric acid

Cockail
1 chilled pineapple shell, for serving (optional)
3 ice cubes, plus crushed ice, for serving
4 1/2 ounces acid-adjusted pineapple juice (above)
2 ounces Muddy River Silver Carolina Rum (see note)
1 ounce Liquore Strega
3/4 ounce Bols Genever
3/4 ounce curacao, such as Pierre Ferrand Dry
12 drops Bittermens Tiki bitters
2 dashes Cocktail Kingdom Wormwood bitters
2 straws, for serving

Instructions

To make the acid-adjusted pineapple juice: In a large pitcher, combine the juice and citric acid. Stir to dissolve the citric acid.

To make the cocktail: Fill the chilled pineapple shell with crushed ice. 

In a cocktail shaker, combine the ice cubes, acid-adjusted pineapple juice, rum, Strega, Genever, curacao, and both bitters. Shake until well-chilled, about 30 seconds, and then strain into the pineapple shell. Serve, drinking from the straws.
