Lavender Simple Syrup

Lavender Simple Syrup

Serves: 12

Hands On Time:

Total Time:

1 cup water
1 cup sugar
1/2 cup fresh lavender flowers
1 ounce vodka (optional)

Combine the water, sugar and lavender flowers in a medium saucepan. Bring to a simmer, stirring, to dissolve the sugar. Turn off the heat and let cool.

Pour the mixture through a fine mesh strainer into a Mason jar. Add the vodka if you’d like to preserve the syrup for long-term use. Seal and refrigerate. The vodka-free syrup is good for up to three weeks.

About the recipe

While you may be used to seeing them only as cocktail ingredients, simple syrups are also a great substitute for granulated sugar in lemonade, sweet tea or for adding pep to your seltzer water for a refreshing summer soda. Feel free to adapt this easy recipe to use any herb or flower growing in your garden. This recipe is modified from The Drunken Botanist by Amy Stewart.
