Thyme Simple Syrup
1 cup water
1 cup granulated sugar
5 to 6 sprigs lemon or plain thyme

2 ounces lemoncello
2 ounces fresh lemon juice
1/2 ounce vodka
1 splash sparkling water or soda water
1 lemon slice, seeded


To make the simple syrup: In a saucepan, heat water, sugar and thyme until sugar dissolves. Set aside in order for thyme to infuse the liquid, 1 or more days.

In a shaker, combine lemoncello, lemon juice, generous 1 ounce simple syrup and vodka. Shake with ice and pour into a tall glass. Taste and add simple syrup, if desired. Top with a splash of sparkling water. Garnish with a lemon slice.

Refrigerate remaining simple syrup to use later.


Per serving: 178 calories (no calories from fat), trace protein, 13 grams carbohydrates, no fiber, no fat, no cholesterol, 2 milligrams sodium.

About the recipe

This refreshing summer drink tastes like lemonade with a kick. It begins with simple syrup infused with fresh thyme , then vodka is added and lemoncello. It's topped with a splash of sparkling water for a little effervescence. Add simple syrup to your preferred sweetness.
