Strawberry Cobbler

3 pounds strawberries
1 lemon, juiced
2 cups and 3 tablespoons brown sugar
3 tablespoons of corn starch
2 cups of all purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
1/2 cup butter
2 eggs
1 teaspoon vanilla extract


Heat oven to 375 degrees. Wash the strawberries and dry on a towel. Cut off the green tops off the strawberries and cut in half or quarter depending on size.

In a medium bowl, mix the cut strawberries, lemon juice, 3 tablespoons brown sugar and corn starch until well incorporated. Pour into a 13 x 9 inch baking dish.

In a seperate bowl, mix the flour, baking powder, the remaining brown sugar, cinnamon and salt together. Cut the butter into the flour mixture until they are pea sized chunks.

Crack eggs into a small bowl. Add in vanilla extract and whisk together. Pour egg mixture into the flour mixture and stir lightly to mix.

Spoon dollops of the crust over the strawberries in the baking sheet to cover.

Bake for 40 to 50 minutes, until top is browned and crusty. Remove from heat and let rest for 10 minutes.

Serve with whipped cream or ice cream.
