
Buttermilk Chess Pie

Ingredients
8 tablespoons (1 stick) margarine or butter, softened
1 cup chunky or crunchy peanut butter
1 cup packed light brown sugar
1 large egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
About 45 jumbo semisweet chocolate morsels
Instructions
Heat the oven to 350 degrees.
In a large bowl, cream the margarine, peanut butter and sugar until very light using an electric mixer on medium speed. Add the egg and beat well. Add the flour and baking soda and beat just to combine.
Form the dough into 1-inch balls and place 1 inch apart on baking sheets. Gently flatten each ball with the tines of a fork pressed in one direction and then across at 90 degrees to make a checkered pattern. Place one chocolate chip in the middle of each cookie.
Bake until the cookies are golden around the edges but not yet browned, 10 to 12 minutes. Let cool and serve.
