Gluten-Free Campfire Banana "S'mores"

Ingredients

4 extra ripe bananas
4 tablespoons semisweet chocolate chips
4 tablespoons miniature marshmallows

Instructions

Build a medium campfire.

Use a knife to cut out a 1-inch-wide strip of the banana peel almost the entire length of the banana. Leave the ends intact and the rest of the peel still attached. Cut a seam down the center of the banana for filling. Fill each seam with chocolate chips and marshmallows. Tightly wrap with a double layer of heavy duty aluminum foil, and place near the fire at the base. Cook until bananas are soft and hot, 10 minutes. Serve.


About the recipe

If you love the idea of eating s’mores while camping, but would prefer a gluten-free dessert, try using a roasted banana as a base in lieu of graham crackers. As the ripe bananas roast in the campfire, the marshmallows and chocolate melt while the bananas soften, creating a sweet treat that’s lush and packed with flavor.

Bananas that are very ripe, especially those with a few brown or black spots, will soften faster and have a more pronounced sweetness than a starchy, immature banana.
