Campfire Peach Cobbler

5 large ripe peaches, pitted and sliced
¾ cup light brown sugar, packed
Juice of 1 lemon
1 tablespoon cornstarch
2 teaspoons ground cinnamon
1 teaspoon kosher salt
1 package store-bought pie dough, cut into 1-inch strips
1 tablespoon granulated sugar


Build a medium-sized campfire.

In a heavy-bottomed Dutch oven with a flat lid, add peaches, brown sugar, lemon juice, cornstarch, 1 teaspoon cinnamon and salt, and stir to combine. Arrange pie dough into a lattice top. In a small bowl, add granulated sugar with remaining cinnamon and mix well. Sprinkle pie dough with cinnamon sugar and place the lid on top of the Dutch oven.

Place a metal rack over your campfire and set the Dutch oven in the center. Scoop some of the burning embers and place on top of the lid to brown the crust. Cook until crust is browned and crisp, 20 to 30 minutes. Remove from the heat and safely discard embers from the lid. Remove the lid and serve.
