Blueberry Clafoutis

Butter and granulated sugar, for dusting
2 cups blueberries
2 cups half and half

4 ounces cream cheese, cut into cubes
6 eggs
2 cups granulated sugar
1 cup plus 2 tablespoons all purpose flour
2 tablespoons packed brown sugar
1 ½ tablespoons bourbon
1 tablespoon vanilla extract
1 teaspoon salt


Heat the oven to 350 degrees. Butter the bottom and sides of a 10-inch cast iron skillet. Dust the inside of the skillet until completely coated with a light layer of sugar, then place blueberries on top. In a medium saucepan, combine half & half and cream cheese and bring to a simmer until cheese is softened, whisking until smooth. In a large mixing bowl, beat eggs until smooth. Add granulated sugar, flour ,brown sugar, bourbon, vanilla and salt until smooth. Add the warm dairy mixture and mix until smooth. • Pour batter on top of blueberries and bake until firm, the outer edges have browned, and a knife inserted into the center comes out clean, approximately 1 hour.

A clafoutis is a French dessert that almost tastes like a hybrid of a cake and a flan. It’s so easy and you can swap out fruits, depending on the season. We like it with vanilla ice cream.
