Nut Rolls

Ingredients

1 (12-ounce) box vanilla wafers
1 (15-ounce) package raisins
1 pound English walnuts, black walnuts or pecans, or a combination
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
Pecan halves (optional)

Instructions

In a food processor, finely grind the cookies. Add the raisins and process until finely chopped and well combined. Transfer to a mixing bowl.

In the food processor, finely chop the nuts. Add to the mixing bowl. Stir, then working in 2 batches, return the mixture to the food processor and run briefly to thoroughly combine.

Return the mixture to the mixing bowl. Stir in the sweetened condensed milk and vanilla extract.

Divide the mixture into 3 or 4 balls. Roll on wax paper into logs about 1 1/2 to 2 inches in diameter. Wrap in wax paper and chill 1 hour.

To serve, slice into 1/4-inch thick rounds. Top with pecan halves, if desired.
