Grilled Peaches

1 tablespoon unsalted butter
1/4 cup dark rum

2 tablespoons dark brown sugar
6 ripe peaches, halved and pitted


Heat a grill to medium.

In a microwave or on the stove, melt the butter. Add the rum and brown sugar and stir until the sugar dissolves.

In a medium bowl, gently toss the peaches with the sauce. Grill the peaches, cut-side up, occasionally brushing with the rum mixture, until grill marks are visible, about 5 minutes. Flip and cook until grill marks are visible on the second side and the peaches are tender, about 5 minutes. Serve warm.


Per serving: 78 calories (percent of calories from fat, 22), 1 gram protein, 14 grams carbohydrates, 2 grams fiber, 2 grams fat, 5 milligrams cholesterol, 21 milligrams sodium.

About the recipe

If you are feeling virtuous, serve this with vanilla yogurt and berries on top. For the rest of us, a scoop of caramel ice cream is a the way to go.
