Crispy Peanut Squares

1 cup sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 teaspoon vanilla
6 cups crisp rice cereal squares, such as Rice Chex
1 cup peanuts


Lightly grease a 9- by 13-inch baking dish with nonstick oil spray.

In a large microwave-safe bowl, combine the sugar, corn syrup and peanut butter. Microwave on high, stirring once, until the sugar has melted, 3 to 4 minutes. Stir in the vanilla.

Fold the cereal and peanuts into the peanut butter mixture, continuing to stir until well-combined. Spread the mixture into the prepared pan. Press lightly with the back of a wooden spoon or a spatula to make sure the mixture is firmly packed. Cover and refrigerate until set, about 1 hour. Cut into squares and serve.
