Mixed Berry Jam

Ingredients

2 1/2 pounds fresh or frozen berries, such as strawberries, blueberries, raspberries or blackberries
3/4 cup sugar
1/2 cup water
Juice of 1/2 lemon

Instructions

In a large saucepan, combine the berries, sugar and water, and place over medium-low heat. Let the berries simmer gently, stirring occasionally, until the mixture has thickened and most of the liquid has evaporated, about 90 minutes.

Remove from the heat and stir in the lemon juice. Use a potato masher or a wooden spoon to break up any large remaining pieces of fruit. Refrigerate until cool, at least 4 hours. Serve or refrigerate for up to 3 weeks.
