Mixed Berry Jam

Serves: 4 cups

Hands On Time:

Total Time:

Ingredients

2 1/2 pounds fresh or frozen berries, such as strawberries, blueberries, raspberries or blackberries
3/4 cup sugar
1/2 cup water
Juice of 1/2 lemon

Instructions

In a large saucepan, combine the berries, sugar and water, and place over medium-low heat. Let the berries simmer gently, stirring occasionally, until the mixture has thickened and most of the liquid has evaporated, about 90 minutes.

Remove from the heat and stir in the lemon juice. Use a potato masher or a wooden spoon to break up any large remaining pieces of fruit. Refrigerate until cool, at least 4 hours. Serve or refrigerate for up to 3 weeks.

About the recipe

Making jam is a fantastic way to preserve fresh fruit at the peak or end of its season. Conversely, if you have a craving for berries during the winter months when berries pack less flavor and sweetness, jam is one of the best preparations to help you get your fix. Instead of adding a hefty amount of sugar like many jam recipes, this version utilizes a low and slow method to coax the natural sweetness out of the fruit.
