Peanut Granola with Strawberries

1/2 cup dry roasted peanuts
1/2 cup slivered almonds
1/2 cup pecan halves
1 cup old-fashioned oatmeal
3/4 cup melted unsalted butter
1/2 cup honey, plus more for serving
3 tablespoons all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
2 cups Greek yogurt
2 cups quartered and hulled strawberries


Heat the oven to 275 degrees. Line a rimmed baking sheet with parchment paper.

In a food processor, pulse the nuts until coarsely chopped. Transfer to a large bowl and add the oatmeal, butter, honey, flour, cinnamon, nutmeg, ginger and salt. Stir thoroughly to coat everything in the butter, honey and spices.

Transfer the mixture to the prepared baking sheet and bake until the nuts are toasted and the granola is crisp, about 45 minutes. Let cool completely.

To serve, divide the granola among serving bowls. Top each bowl with 1/2 cup of the Greek yogurt and 1/2 cup of the strawberries. Drizzle with honey and serve.

About the recipe

Making your own granola will give you a cereal with deeper, toastier flavor than anything available on the supermarket shelves. Honey provides just enough sweetness to complement the oats and nuts without becoming cloying. If strawberries are not in season, feel free to substitute any fresh fruit you’d like.
