Instant Pot Oatmeal with Dried Fruit

3 cups water
1 cup steel-cut oats
1/2 cup dried apricots, sliced
1/2 cup dried cranberries
1/2 cup fresh blueberries
1/4 cup toasted pecan pieces


Place water and oats into an Instant Pot and seal the lid. Use the porridge function and set the timer for 6 minutes. After the timer sounds, release the pressure and stir, adding more liquid if necessary. Divide oatmeal among serving bowls and top with fruits and pecans. Serve.

Steel-cut oats carry a notoriously long cooking time; however, using an Instant Pot chops the active cooking time down to just six minutes under high pressure. This recipe illustrates the most basic liquid-to-oats ratio, using simply water and oats, but you can substitute some of the water with milk or almond milk for more richness or flavor.
