Eggnog Pancakes

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
2 1/4 cups packaged eggnog, such as Horizon Organic, plus more if needed
1 teaspoon vanilla
2 tablespoons unsalted butter, such as Horizon Organic, melted and cooled
1/2 teaspoon nutmeg
1 cup real maple syrup
1 cinnamon stick
1/8 teaspoon nutmeg


Whisk together flour, baking powder and salt. In a separate bowl, whisk together eggs, eggnog and vanilla, beating well. Add melted butter and nutmeg. Add flour mixture, beating just to combine (it’s okay to have a few lumps). Add 2 to 4 more tablespoons of eggnog if batter is too thick.

Drop by 1/4 cupfuls onto greased, hot griddle or pan and cook until lightly browned and fluffy, flip and cook until other side is lightly browned.

Meanwhile, heat syrup and spices in a small saucepan and simmer gently for 5 minutes. Remove from heat and let infuse for 15 minutes. Remove cinnamon stick and serve with the pancakes.
