Peaches and Cream Tartines from "Southern from Scratch"

1 cup cream cheese, at room temperature
1 tablespoon honey
1/2 teaspoon vanilla
6 pieces of toast
2 ripe peaches, sliced
1 cucumber, seeded and sliced into crescents
4 ounces cooked country ham, sliced into bite-size strips
Handful of fresh mint leaves
Freshly ground black pepper (optional)


Combine the cream cheese, honey, and vanilla in a bowl.

Spread the cream cheese mixture evenly on the toast. Top with the peaches, cucumber, ham, mint leaves, and several grinds of black pepper, if desired. Serve immediately.

About the recipe

This open-faced sandwich is loaded with fresh ingredients. A wee bit of salty country ham acts as a counterbalance to the sweetness of the honeyed cream cheese and peaches. A perfect summertime snack.
