While we love to cook up (and eat) our in-house Southern Kitchen recipes, we still spend plenty of time reading recipes from bloggers and other food websites. Every Friday, we'll round up some of our favorites so that you'll have plenty of fodder for your weekend kitchen experiments.

Our favorite recipes this week are all quick and easy. We're loving a simple macaroni and cheese, a decadent chocolate olive oil cake, and more:

One-pot mac and cheese
There's nothing simpler than stirring up a pot of boxed mac and cheese, but, while the blue box can be nostalgic, it is never actually that good. This week the team at Food52 published a recipe from Melissa Clark's new cookbook that will help you make ooey, gooey and delicious mac and cheese in just about the same amount of time it'll take you to make a box of Kraft. That's what we call genius.

Chocolate Olive Oil Cake
Another dead-simple recipe we discovered this week is from Smitten Kitchen: a one-bowl chocolate olive oil cake that just happens to be vegan. Its deep, rich appearance that screams dark chocolate has us running to the kitchen. Even better, blog author Deb Perelman says it'll still taste like it was just baked after a full four days in the fridge.

Garlicky Parmesan Sweet Potatoes
If you'd rather tackle something healthier, these garlic and Parmesan crusted sweet potatoes from The Kitchn look positively finger-licking good. There are only six ingredients (including salt and pepper), and they roast quickly in a hot oven, so the whole dish will come together in no time.

Mini Tartes Tatin
Or head in the complete opposite direction with these four-ingredient miniature apple tartes tatin from the test kitchen at Williams-Sonoma. Making use of pre-made puff pastry and caramel sauce makes these elegant desserts a snap to throw together — perfect for any last-minute dinner party.
